

As a Chef with Celiac Disease, I truly live the life of advocating for a safe eating environment. I am no stranger to the distrust of eating out and the lack of understanding that Celiac is an autoimmune, that attacks the small intestine. NOT an allergy or a lifestyle choice. A wheat allergy, is sometimes only wheat. Celiac is wheat, barley, and rye, which includes anything that has malt additives. I am also acutely aware that many people with a Celiac diagnosis have malabsorption issues that cause issues with foods that are gluten free, such as dairy. I think one of the biggest differences from people that offer gluten free, and my kitchen, is that an imaginary alarm goes off when we have a gluten free person. All items that are gluten free are made before any gluten containing items. We actually handle all the major allergens in an order that allows us to isolate any handling, or packaging of items that may be an issue. We label all major allergens as well. Someone who has no issue with any foods, will read this and not truly see the purpose for a long statement. I do know it will resonate with those who have no choice but to care. Besides being certified in ServSafe as required by the state, I also have an optional Allergen Certification.
